Instructions

  1. Add pisco, lime juice, simple syrup, and egg white to a shaker.
  2. Dry shake vigorously for 15 seconds.
  3. Add ice and shake for another 15 seconds.
  4. Strain into a chilled coupe or old-fashioned glass.
  5. Add 3 dashes of Angostura bitters on the foam – create a design if desired.

Both Peru and Chile claim the Pisco Sour. Victor Morris, an American bartender in Lima, popularized it in the 1920s. Peru has a national holiday for it (first Saturday of February).

🍇 Pisco Styles

Peruvian pisco is unaged and pot-distilled (Quebranta grape is classic). Chilean pisco can be aged. Both work, but they create different drinks – try both!
