Extended Maceration: Unlike quick-press Provence rosé, Tavel grapes spend 12-24 hours (or more!) in contact with their skins. This extracts more color, tannin, and complexity.

Traditional Techniques: Many producers still use the saignée method or even full red wine vinification techniques, then bleeding off juice early.

Built to Last: While most rosés are "drink now" wines, good Tavel can age 3-5 years, developing savory, spicy notes. Some exceptional bottles age even longer!
