What is a Farmhouse Saison?

The Saison—French for "season"—is perhaps the most romantic of all beer styles. Originally brewed in the farmhouses of Wallonia (French-speaking Belgium) during winter months for consumption by seasonal farm workers (saisonniers) during the summer harvest, these rustic ales were designed to be refreshing, thirst-quenching, and just strong enough to be safe from contamination while not strong enough to impair a hard day's work in the fields.

What makes Saison truly special is its wild, untamed character. Traditional Saison yeast strains produce an extraordinary array of flavors—citrus, pepper, earth, and subtle funk—while fermenting bone dry. History & Origins

Saisons were born of necessity in the farms of Hainaut province, where every estate brewed its own beer. Before refrigeration, brewing happened in cooler months, and these farmhouse ales were stored to sustain workers through the grueling summer harvest. Each farm developed its own recipe, often using whatever grains were on hand—wheat, spelt, oats—alongside local herbs before hops became standard.

The style nearly died out in the 20th century, surviving mainly through Brasserie Dupont, whose Saison Dupont became the template for the modern style. The American craft beer renaissance rediscovered Saisons in the 2000s, and today the style thrives worldwide. True to its farmhouse roots, modern Saisons embrace creativity—brewers experiment with wild yeasts, unusual grains, and local botanicals, keeping the spirit of the original farmhouse brewers alive.
