🍊 Witbier

Belgium's Refreshing Spiced Wheat Wonder

What is Witbier?

Witbier, meaning "white beer" in Dutch, is Belgium's beloved wheat beer that dances on your palate with bright citrus and exotic spice. Unlike its German wheat beer cousins, Witbier gets its distinctive character not just from yeast, but from the addition of coriander seeds and dried orange peel—typically the bitter Curaçao variety. The result is a beer that's impossibly refreshing, with a pale, milky-white haze that looks like liquid sunshine on a cloudy day.

This is the beer that launched a thousand summer patios. Light, crisp, and endlessly drinkable, Witbier has a pillowy soft body thanks to the use of unmalted wheat and sometimes oats. The carbonation is lively, the finish is dry, and every sip seems to whisper "have another." It's sophisticated enough for beer geeks yet approachable enough to convert even the most stubborn wine drinkers. Witbier proves that sometimes the best things in life are delicate, nuanced, and absolutely delicious.

History & Origins

Witbier has been brewed in the Flemish region of Belgium since at least the 14th century, with the town of Hoegaarden being the historical epicenter. At its peak in the 18th century, Hoegaarden boasted over 30 wheat beer breweries. However, the style fell victim to changing tastes and the rise of pilsner lagers, and by 1957, the last Witbier brewery in Hoegaarden closed its doors. The style was effectively extinct.

Enter Pierre Celis, a milkman who had worked at the last Witbier brewery as a young man. In 1966, he decided to resurrect the style, setting up a small brewery in his hayloft using traditional recipes and techniques. His Hoegaarden Witbier was an immediate sensation, sparking a revival that spread across Belgium and eventually the world. Today, Witbier is one of the most popular craft beer styles globally, and we have one determined milkman to thank for saving it from oblivion.

🍽️ Food Pairing

Witbier is a culinary chameleon! Its citrus and spice notes make it perfect for seafood—think mussels, shrimp, or a classic Belgian moules-frites. It's also wonderful with light salads, goat cheese, sushi, Thai cuisine, and fresh spring rolls. The orange notes even make it a surprisingly good match for lighter desserts like lemon tart or vanilla crème brûlée.

🍋 The Orange Slice Debate

Unlike Hefeweizen purists who shun citrus garnishes, Witbier traditionally welcomes an orange slice! The fruit complements the beer's inherent orange peel character and adds visual appeal. However, some beer enthusiasts prefer to taste the brewer's art unadorned. Try it both ways and decide for yourself—there's no wrong answer when it comes to enjoying this refreshing Belgian classic.
